What's your personal favorite gundam? And would you buy the model?
I’ve only seen a handful of shows, but so far my favorite GUNDAM-gundam, like not other non-Gundarium-armored mobile suit/armors, would probably have to beeeee Deathscythe Hell from Gundam Wing. NOT the Endless Waltz design. And HELL YES I would buy that model! Heavy Arms (also from Wing) at a close second, because GUNS!!!!!
But my favorite mechs in the franchise, even held higher than the Gundams, are the Gouf and BIG ZAAAAAAAAAM!

One of my besties and Gundam-guru Devon whipped up a handy guide for diving head-first into this wonderful franchise!
He really just gives a good strategy for the MAIN continuity. What I'm doing is watching the UC stuff until I get overloaded with it, then I take a break with a random spin-off AU series. I watched all the movies and the stuff that takes place around the same time and then watched Gundam Wing. Now I'm on Zeta and when I'm done with that I'll watch G Gundam. Then I'll watch Double Zeta and Char's Counterattack, and see how I feel after that.
Also, he's pretty harsh on Gundam SEED, he'd never ever tell someone to watch it, but he has good reason as a hardcore Gundam fan. Essentially SEED is everything every other Gundam isn't. It's very by-the-books created-to-be-popular super moe same-face otaku-baiting "ANIME" anime, and because of that a lot of people who otherwise wouldn't have anything to do with Gundam are big fans of THAT and badmouth everything else, and because it's popular it's gotten a lot more sequel movies (even in at least one case causing a different Gundam project to be cancelled so they could make a SEED product instead) and loads more toys/models than other Gundam shows have. So just letting you know what you're getting into if you decide to give SEED a try.
