Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup powdered sugar. 2 teaspoons pure vanilla extract. 2 cups all-purpose flour. 1/2 teaspoon salt. 2 cups semisweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix until well combined. Gradually add the flour and salt to the mixture, mixing until the dough comes together. Transfer the cookie dough to a piping bag fitted with a large round tip. Pipe 2-inch long strips of dough onto the prepared baking sheet, leaving some space between each strip. Bake the cookies for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the semisweet chocolate chips in 30-second intervals, stirring between each interval until smooth. Take one cookie and spread a generous layer of melted chocolate on the flat side. Top it with another cookie to form a sandwich, pressing gently to allow the chocolate to spread to the edges.
