S O T O A Y A M The classic Indonesian Chicken Soup with so’un (cellophane rice vermicelli). Chef Wan-wa @chefonewa has tweaked It’s Java’s soto ayam to make it their best rendition yet. The chicken soup is lit with tumeric and a substantial spicy stock base flavoured with kaffir lime leaf & coriander, topped with boiled egg and deep fried shallot. Today's soto is named after the famous Soto Ambengan Pak Sadi eatery in Surabaya, near where Chef used to work. It is thickened with Koya (crushed kerupuk). The Soto Ambengan comes with rice and a slice of lemon, which is squeezed over the soto. Totally enak! Soto Ayam is a popular breakfast dish but you can have it anytime of the day or night.
