This Vegan Jackfruit Blanquette is a hearty and comforting dish with soft jackfruit in a creamy vegetable broth. It's great for a cozy dinner or a special event.
Ingredients: 2 cans of young green jackfruit, drained and rinsed. 1 onion, finely chopped. 2 cloves of garlic, minced. 2 carrots, sliced. 2 celery stalks, diced. 1 cup of mushrooms, sliced. 3 cups vegetable broth. 1 cup unsweetened plant-based milk. 2 tablespoons all-purpose flour. 2 tablespoons olive oil. 1 tablespoon fresh thyme leaves. Salt and pepper to taste.
Instructions: In a big pot, heat the olive oil over medium-low heat. When you add the chopped onion and garlic, cook them until they get soft. After you add the mushrooms, carrots, and celery, cook for 5 minutes. Add the flour and mix it in well to coat the vegetables. Slowly add the vegetable broth while stirring all the time to keep the lumps from forming. Turn the heat down to low and add the jackfruit and thyme leaves. Turn down the heat, cover, and wait 20 minutes. Add the plant-based milk and season with pepper and salt to taste. Simmer for five more minutes, or until everything is hot. If you want, you can serve it hot and top it with fresh herbs.
