my boyf is vegan, and we use oat milk and vegan butter to replace dairy products when we're cooking. he also has a few vegan cheeses. Japchae noodles are really good if you have the ingredients for it, and we use mushrooms to make biscuits and gravy/mashed potatoes and gravy. he eats a lot of beans to make up for the protein, but he also really likes vegan chicken which is made from chickpeas (often called chick'n). he also seasons a lot with nutritional yeast, which is high in B12 and makes up for the lack of that in vegan foods. it kinda has a buttery salty taste but if you sprinkle it onto foods it's pretty good! he does a lot of the cooking so i'm slowly getting used to vegan meals and snacks.
