Ingredients: 16 oz cream cheese, softened. 1 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup chopped red bell pepper. 2 tbsp chopped jalapeos adjust to taste. 2 tbsp chopped cilantro. 1 tsp cumin powder. 1/2 tsp garlic powder. 1/4 tsp chili powder. 1/4 tsp paprika. 1/4 tsp salt. 1/4 tsp black pepper. 1/2 cup finely crushed gluten-free tortilla chips. 1/4 cup chopped pecans optional, for coating.
Instructions: In a large mixing bowl, combine cream cheese, cheddar cheese, green onions, red bell pepper, jalapeos, cilantro, cumin powder, garlic powder, chili powder, paprika, salt, and black pepper. Mix well until fully combined. Form the mixture into a ball shape. In a shallow dish, spread out the crushed tortilla chips. Roll the cheese ball in the crushed tortilla chips until fully coated.
