This vegan version of Japanese milk bread is great for sandwiches or toast because it's fluffy and slightly sweet.
Ingredients: 4 cups all-purpose flour. 1/4 cup sugar. 2 1/4 tsp instant yeast. 1 cup almond milk, warmed. 1/4 cup vegan butter, melted. 1 tsp salt.
Instructions: In a large bowl, combine flour, sugar, and yeast. Add warm almond milk and melted vegan butter. Mix until dough forms. Knead dough on a floured surface for 8-10 minutes until smooth and elastic. Place dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours until doubled in size. Punch down dough and divide into 3 equal portions. Shape each portion into a loaf and place in greased loaf pans. Cover pans and let dough rise for another 30-45 minutes. Preheat oven to 350F 175C. Bake loaves for 25-30 minutes until golden brown and hollow-sounding when tapped. Remove from oven and cool on a wire rack before slicing.

Cook Time: 30 minutes
