I have a question about Alter Ego. Can the card copy hexproof creatures because the card doesn't necessarily target them. The text says 'any' creature and doesn't call you to target a creature to copy.

Altered Ego and other clones can copy any creature on the battlefield.

With Mirrorpool ;the ability to copy target instant/sorcery you control. I cast pulse of murasa, whilst on the stack I sacrifice mirrorpool and pay the cost could I copy pulse to get back mirrorpool that I sacrificed with the copy spell? Thanks.

Yes.

Mirrorpool is in your graveyard by the time its activated ability resolves and makes a copy of Pulse of Murasa, so it’s a legal choice when you change the target of the copy.
