I’ve never had scotch eggs, and those look delicious. Do How do you cook the sausage so that the yolk stays semi-soft like that?
i soft boil them first. put the eggs in the pot immediately when you put it on the water, cover them, when it starts boiling take the cover off, turn off the heat, leave the eggs in for a couple minutes, then put them in a cold water bath. they're easiest to peel when they chill in the fridge a few hours or overnight (the shell proteins break down or something) peel em! then wrap them in seasoned pork! and bake at 375 for 20-25 min. i leaned toward more pork per serving so i made 6 from a pound of pork
