We tried our hand at some jerk eggplant today. Recipe by @minimalistbaker. She clearly stated to use oil while grilling. My teenage son volunteered to grill and I forgot to tell him that step. 😲Let’s just say that some of the eggplant didn’t make it! 🤦🏾♀️ I also added some rice cooker “rice and peas”, coconut corn on the cob, and kale with vegan ceased dressing.
