Foggy became a butcher AU
You know, my mom wanted me to be a butcher. (No but seriously, I have actually considered this, since IC that story comes up a lot and I think he’d have his own sort of “what-if”s about the option.)
1) You bet your butt that butcher shop would also be a small-seating deli, because making people wait all the way until they got home to eat delicious cured meats is just wrong. It’s also the sort of butcher shop that employs high school kids that need a job, and looks the other way if somebody’s a little short on payment or a kid gets an extra apple/glass of lemonade. The whole community knows if they need a meal, Nelson’s is the place to go.
2) There are jokes about the deli not being Kosher (seriously: Reform, maybe Reconstructionist Jew Foggy, come at me), but he doesn’t keep it Kosher only because his (and Matt’s) love of bacon is something fierce. He has gone through the process of getting his kitchen certified precisely twice, both to help out friends who needed a last-minute celebration meal. He still needed a bro there to make sure he didn’t screw anything up, because being aware of the rules and following them are two incredibly different things.
3) Foggy keeps a running list of Reglar’s orders and starts preparing them as soon as the person walks in the door? And if certain regulars get a little special treatment (oops, they were talking and he just so happened to forget to charge them!) Well, it’s his damn business and he’ll do what he likes
4) #3 is why Nelson’s is both one of the most popular delis in Hell’s Kitchen, and also one of the most modest. Despite having a large following (including hipsters who think it’s cool to go “slumming” to get their ‘artisan sandwiches’) Foggy isn’t just about making a profit, and so long as his bills are getting paid, he’s able to keep the shelves stocked, and keep the lights on at home, he’s willing to be as generous as he can be.
5) More than when he’s a lawyer, butcher!Foggy is dedicated to the ideas of Settling Down and Starting a Family. He’s still Not Straight, and his family might end up being a gorgeous man and a nice lab/boxer mix, but the idea of having that home life, somewhere to relax and take care of somebody and just be seems right to him.
