We accidentally bought too many carrots 😅 – so it was time to bake a carrot cake with peanut icing 😋 #carrotcake #carrots #peanutbutter #sugaricing #vegan #vegetarian #rabbitfood #vanilla #baking #easycooking #juliaiscooking #😋 INGREDIENTS For the dough: * 400 g carrots * juice of 1 Lemon * 175 ml tasteless oil (sunflower oil or rapeseed oil) * 300 g spelt flour * 100 g coconut flour * 16 g baking powder * pulp of 1 vanilla pod * 150 g brown sugar * 100 g chopped nuts (almonds & walnuts) * 1/2 tsp cinnamon * optional: 1/4 tsp ginger powder & 1/4 tsp anise * pinch salt For the peanut icing: * 2 tbsp peanut butter (crunchy), * 80g icing sugar * 2–3 tbsp water
