These Taco Seasoned Shrimp Kabobs are a delicious and easy-to-make dish with a zesty taco twist. Perfect for grilling season!
Ingredients: 1 pound large shrimp, peeled and deveined. 1 red bell pepper, cut into chunks. 1 green bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced into rounds. 1/4 cup olive oil. 2 tablespoons taco seasoning. 1 tablespoon lime juice. Wooden skewers, soaked in water for 30 minutes.
Instructions: To make a marinade, mix olive oil, taco seasoning, and lime juice in a bowl. Switch between the shrimp, bell peppers, onion, and zucchini on the wooden skewers as you go. Spread a lot of the marinade over the skewered shrimp and vegetables. Warm the grill up to medium-high heat and grease the grate. Grill the shrimp kabobs for two to three minutes on each side, or until the shrimp turn pink and the vegetables get a little charred. Take it off the grill and serve it hot. If you want, you can add more lime wedges and taco seasoning as a garnish.
