Legumes are big in our pantry. They hold prime real estate on my shelves. One of these is called garbanzo beans. Today I pressure cooked some and added the beans directly to my salad. Garbanzo beans are high in protein and fiber. This high fiber content lends itself to one interesting fact about eating these beans: you will feel full and have less of a need to snack. They contain manganese (important for energy production and anti-oxidant activity), folate, copper, phosphorus and iron as well. They are low in fat and cholesterol naturally. Heart healthy and they regulate blood sugar levels nicely. I like to cook my own by simple soaking them overnight to start, then using the pressure cooker for25-30 minutes.
