Ingredients: 1 sheet of puff pastry. 1 cup almond flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1 egg. 1/2 teaspoon almond extract. 8-10 fresh apricots, halved and pitted. 1/4 cup apricot jam. 1 tablespoon water. 1 kaffir lime leaf, finely chopped. 1 teaspoon grated ginger. 1/4 cup powdered sugar.
Instructions: Preheat your oven to 375F 190C. Roll out the puff pastry on a baking sheet and fold in the edges to form a crust. In a bowl, mix almond flour, granulated sugar, softened butter, egg, and almond extract until smooth. Spread the almond cream evenly over the puff pastry. Arrange apricot halves on top of the almond cream. Bake for 25-30 minutes until the pastry is golden brown and the apricots are tender. In a small saucepan, heat apricot jam with water, kaffir lime leaf, and grated ginger until it forms a glaze. Once the tart is baked, brush the glaze over the apricots. Allow the tart to cool slightly before serving. Dust with powdered sugar before serving.
