Ingredients: 1 bunch kale, stemmed and chopped. 1 cup seitan, diced. 1 can white beans, drained and rinsed. 1 onion, chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, saut until softened. Stir in diced seitan and cook for 3-4 minutes until lightly browned. Add chopped kale to the pot, cook until wilted. Pour in vegetable broth, add dried thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Add drained white beans to the stew, simmer for an additional 5 minutes. Adjust seasoning to taste. Serve hot and enjoy!
