Great for barbecues, these Lemon-Garlic Lamb Kebabs are tasty and full of flavor. When you mix the juicy lamb cubes with the zesty marinade, it tastes amazing and makes your mouth water.
Ingredients: 1.5 lbs lamb, cubed. 1/4 cup olive oil. 3 cloves garlic, minced. 2 tablespoons fresh lemon juice. 1 teaspoon lemon zest. 1 teaspoon dried oregano. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. Wooden or metal skewers, soaked in water if using wooden.
Instructions: In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, oregano, cumin, paprika, salt, and pepper to create the marinade. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for better flavor. Preheat the barbecue grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece. Place the kebabs on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has a nice char. Serve the Lemon-Garlic Lamb Kebabs hot, garnished with additional lemon slices and fresh herbs if desired.
