🍃🌾Silken tofu 🌾🍃
I first tasted tofu served this way when I was taken by a friend to a small rickety bar, with very low ceilings and even less seating, in the Golden Gai district of Tokyo.
Accompanying a lush mix of green tea and sake, to temper the cramped surroundings and summer heat; came a cold slab of silken tofu with a little soy, and sprig of scallions. Despite being pretty sure a cold slab of tofu wouldn’t be my cup of tea, I plucked up the courage and tried it. The balmy, creamy taste of the fresh tofu came to life with the umami of the soy.
Whenever I can, I ask for it in restaurants, either topped with bonito or with a side of century eggs, but always with a soy based sauce.
Pictured above, I have prepared the silken tofu with soy, pumpkin seeds and some roe with several sides to pick on and combine: chopped daikon with spicy oil, edamame, walnut and garlic paste with dried wakame and finally steamed bok choy and spiced pickled vegetables.
A Speak Easy joint is now in trend. This Japanese bar is tucked in a dead corner of an old mall. The philosophy of keiseki is that we are supposed to honor the area that we're living in. Making the best use of what the season has to offer. One of the first things I learned about keiseki is that the integrity of the ingredients should never get lost. In Japanese, it's called sozai wo mamoru, which means to 'protect the ingredients.' After having this garden, to see it from seed, watch it grow little by little, to watch the process.. to see it struggle, to see it survive. It's this whole process. Everything takes time, everything takes the right amount of nurturing. Everything deserves effort because it's making the effort. This little tomato took three months to grow, and to just toss it or to waste it, or to take it so lightly, we're not doing our best to appreciate what nature has to offer or what the lessons of life all around us are trying to teach us.
