I'm watching Iron Chef America like I do every Saturday and Iron Chef José Garces just created such beauty with sparkling beverages as the main ingredient that I felt compelled to share his creations with you, tonight... in the dish above, he used dry ice to make that bubbling bubbly you see in the glass. It was a drink and a sauce for the food, too!!! It looks like it was created in a mad scientist's laboratory, doesn't it? All of his dishes were stunning. I want to learn to plate like this someday....

Aren't these dishes absolutely gorgeous?!! I would love to taste every one of them, wouldn't you?
