Ok, so the lemon-saffron pistachio traybake was HULLUH GÜD, but I forgot to take a pic when fresh outta the oven so these are leftovers. #SorryNotSorry Then theres me just, ya know, BROWSING the squash section, just snickering to myself/admiring the audacity of these squashes. Then I made some miso chocolate chip cookies that, guess what, don’t taste any different! (The dough tasted caramel-y/miso-y, and fresh out of the oven they tasted caramel-y/miso-y, but not a day later. 🤷🏻‍♀️) And then I made my first eve GOOD mac’n’cheese with a roux, a lil unexpected cheddah, leftover mexican shreds, cream, pepper, and nutmeg. I never understood the whole “breadcrumbs on top” thing, but i wanted to make it more legit. Lemme tell you what, get you some garlic croutons, a baggie, a rolling pin, and take out your anger on em! Baby’s first tart! Ombre rosette ginger pear custard tart in my 9” tart pan. (Slightly amended from @nytcooking recipe.) Should have lined it with parchment to prevent leaks from the custard, but it is lightly spiced with vanilla and ginger and a little treat. Not heavy at all or too strong in flavor. (I STILL have one extra pie crust to use from the pie dough debacle from Thanksgiving.) And I just made a shit ton of sweet and spicy and savory-salty pecans. Must. Not. Eat. All. The. To continue #squashapalooza2020, I roasted red kuri squash and butternut squash and mixed half of each to make this @nytcooking spiced squash pie with candied ginger and baby’s first Swiss meringue! (Think like pumpkin pie but better IMO.) The meringue added too much sweetness, but I needed to fill up the crust as the pie custard didn’t rise as much as I thought it would. Swiss meringue is made by slowly adding sugar while vigorously whisking egg whites in a double boiler until 160° and then beating til fluffy. Then tonight my sweet tooth succumbed to some gluten-free chocolate chip cookies. I just like the crispy chewy cookie that you get with almond flour better than all-purpose flour. Three very different recipes this week: (1) @nytcooking Houseman’s Roasted Kabocha Squash salad with pickled currants, sumac, fennel seed, cilantro, lime, and feta. So. Many. Flavors! (2) Then baked squash seeds (because duh I cooked all the squash this week) some plain and some with chili powder and berbere spice (look it up!). A lil thicker than pumpkin but still good. Must remember to keep in an airtight container in the future or they absorb the moisture from the environment and don’t stay crisp. (3) And last but not least, @eatingwell mag’s double pumpkin cream roll with pecans and crystallized ginger. It was good but not knock your socks off. Not sure if worth the trouble but it was still tasty. Not sure what to alter tho! And then, as inspired by @xastris, shots of my #shitshowkitchen! This is AFTER some clean-up also. My genius butt made this barbacoa beef in the Instapot, but you can’t see it under all the damn taco toppings. Just trust it was worth it. I still have a full pound in the freezer for next week. YUSSSS. Also, @nytcooking berry clafoutis for breakfast (I know, I’m a broken record but it’s soooo easy and good!) and pumpkin cookies with orange zest and brown butter maple frosting from @nytcooking (I added the 🍁 syrup). I made sloppy joes on brioche with avocado, white cheddar herbed mac & cheese (with broken sauce 😡), and cucumber dill salad. Dessert was Mexican spicy chocolate chocolate-chip cookies. I don’t drink and I needed something to do with my hands. It felt good to focus on cooking and baking and not the negativity of the night. #sundaymealprep for the week means store bought soup & grilled cheese for lunch (to use up some bread that’s about to go bad!) and quiche! Delicata squash with onions, kale, and sage in one store-bought-but-par-baked crust, and ricotta, garlic, and asparagus in the other. I don’t particularly like eggs or quiche, but it’s easy, has protein, freezes and reheats nicely (when you’re a party of 1), and is fairly quick to make.
