Ingredients: 2 cups almond flour. 1/2 cup powdered erythritol. 2 teaspoons baking powder. 1/4 teaspoon salt. 2 teaspoons ground cardamom. Zest of 1 orange. 2 large eggs. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1/4 cup unsweetened almond milk.
Instructions: Warm the oven up to 325F 165C. Put parchment paper on the bottom of a baking sheet. Add almond flour, baking powder, salt, cardamom, and orange zest to a bowl and mix them together using a whisk. Mix the eggs, melted coconut oil, vanilla extract, and almond milk in a different bowl until everything is well mixed. Slowly add the wet ingredients to the dry ones and mix them together until a dough forms. Place the dough on the baking sheet that has been prepared and roll it into a long, thin log that is about 12 inches long and 4 inches wide. The log should be baked for 25 to 30 minutes, or until it is set and has a light golden color. Time to cool down. Take it out of the oven and wait 10 minutes. Bring the oven temperature down to 150F 300C. Cut the log into 1/2-inch-thick slices across the diagonal with a sharp knife. Place the slices on the baking sheet and bake for another 15 to 20 minutes, flipping the biscotti over once, until they are golden and crisp. Let the biscotti cool all the way down before you serve it or put it away in a container that won't let air in.
