INGREDIENTS 4 slices of prosciutto 1 cup of grape tomatoes 1 box of Capello’s sweet potato gnocchi Pecorino Romano cheese Olive oil . DIRECTIONS Boil 3 quarts of water in a large pot. Add the frozen gnocchi and stir. Cook for ~5 min (stirring ever 30 sec) or until the gnocchi begin to float. Drain & transfer to a pan with olive oil (~1 tbsp) & some pecorino Romano. Sauté for 2 min. Slice the prosciutto into 2 ish pieces and fold over, slice the tomatoes in half. Add these to the large pan as well & sauté for another 2 min. Once done, add salt & pepper & more pecorino romano cheese.
