Ingredients: 1 medium head cauliflower, grated. 1 cup broccoli florets. 1 cup sliced bell peppers. 1 cup sliced mushrooms. 1/2 cup chopped tofu. 2 tablespoons coconut oil. 2 cloves garlic, minced. 1 tablespoon ginger, grated. 2 tablespoons tamari or soy sauce low-sodium preferred. 1 tablespoon sesame oil. Salt and pepper to taste. 2 green onions, chopped for garnish.
Instructions: Put coconut oil in a large pan and heat it over medium-low heat. Add the ginger and garlic that have been minced and saut until the smell is nice. Put broccoli florets, mushrooms, bell peppers, and cauliflower rice in the pan. Cook the vegetables until they're soft but still have some crunch. Add the chopped tofu to the pan and mix it in. Add sesame oil and tamari or soy sauce to the stir-fry. Add pepper and salt to taste. Keep cooking for another two to three minutes, stirring every now and then. Before serving, sprinkle with chopped green onions.
