Ingredients: 4 chicken breasts, boneless and skinless. 2 tablespoons olive oil. 2 tablespoons fresh lemon juice. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper, to taste. 1 lemon, thinly sliced optional. Fresh parsley, chopped, for garnish.
Instructions: Preheat oven to 375F 190C. In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried thyme, and dried oregano. Place chicken breasts in a baking dish and pour the lemon herb mixture over them, making sure to coat each breast evenly. Season with salt and pepper. If desired, place lemon slices on top of the chicken breasts. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center. Garnish with chopped fresh parsley before serving.
