Ingredients: 2 cups almond flour. 1/2 cup powdered erythritol. 1/4 teaspoon salt. 1/2 cup pine nuts. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1 egg white.
Instructions: Warm the oven up to 325F 165C. Put almond flour, powdered erythritol, and salt in a bowl and mix them together. The dry ingredients should be mixed with melted coconut oil and vanilla extract. Mix everything together well. Put the dough balls on a baking sheet that has been lined with parchment paper. Each ball should be about an inch across. Whip the egg white in a small bowl until it gets foamy. Use the whisked egg white to cover the top of each cookie dough ball. Place pine nuts on top of the cookies and gently press them down. After the oven is hot, bake for 12 to 15 minutes, or until the edges are golden brown. Take it out of the oven and let it cool for 10 minutes on the baking sheet. Then, move it to a wire rack to finish cooling.
