Ingredients: 1 large cucumber, thinly sliced. 1/2 cup sauerkraut. 1/4 lb corned beef, thinly sliced. 1/4 cup Swiss cheese, shredded. 1/4 cup mayonnaise. 2 tbsp sugar-free Russian dressing. 1 tbsp olive oil. Salt and pepper to taste.
Instructions: Place cucumber slices on paper towels and sprinkle with salt. Let sit for 10 minutes to draw out excess moisture. Pat dry with paper towels. In a small bowl, mix together mayonnaise and sugar-free Russian dressing. Spread a thin layer of dressing mixture on each cucumber slice. Top each cucumber slice with a small amount of sauerkraut, followed by a slice of corned beef, and a sprinkle of shredded Swiss cheese.
