i. Cookie Dough:1 1/3 cup almond flour 1 teaspoon baking powder¼ teaspoon salt2 ¼ t cornstarch½ cup coconut oil ½ cup agave nectar¼ cup coconut milk1 tablespoon lime juice¼ teaspoon vanilla extractzest of one large lime½ cup coconut flakes
ii. Lime Icing Glaze:1 cup icing sugar1 tablespoon lime juice
DIRECTIONS1. Preheat oven to 350F/180C2. Line tray with parchment paper3. Measure all the dry ingredients into a mixing bowl and stir them together until homogenous.4. Add coconut oil, agave nectar, vanilla extract, lime zest, lime juice, coconut milk and continue to stir until ingredients are well combined. Add coconut flakes last. 5. Shape cookie using ice cream scoops/tablespoons/teaspoons (depending on your own preference. I like bite-sized cookies). The cookies will spread as they bake; leave 2 inches in between doughballs. Use a fork to level the doughballs for even baking.6. Bake the cookies for 8-10 minutes. Place them on a cooling rack.7. For the lime glaze, stir the lime juice and icing sugar together until the mixture is silky and runny. 8. Drizzle glaze over cookies and add coconut flakes and lime zest if desired.
