A tropical twist on classic donuts are these delicious Key Lime Coconut Donuts. They are the ideal treat for citrus lovers since they are infused with the cool flavors of key lime and coconut. These donuts will make your day, whether you eat them for breakfast or as a sugary snack.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1 tsp baking powder. 1/4 tsp baking soda. 1/4 tsp salt. 1/2 cup unsweetened shredded coconut. 1/4 cup key lime juice. 2 tbsp key lime zest. 1/4 cup vegetable oil. 1/2 cup buttermilk. 1 large egg. 1/2 tsp vanilla extract. Green food coloring optional. Powdered sugar for dusting optional. Additional key lime zest for garnish optional.
Instructions: Preheat your oven to 350F 175C and grease a donut pan. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir in the shredded coconut, key lime juice, key lime zest, vegetable oil, buttermilk, egg, and vanilla extract until the batter is well mixed. If desired, add a few drops of green food coloring to achieve the desired color for your donuts. Fill each donut cavity in the pan about 2/3 full with the batter. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into a donut comes out clean. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
