Lunch Bunch: Turkey, Avocado Croissant Sandwich
Today's lunch gets a bigger thumbs up from me than it does from Jack. We eat mostly whole grains at home, but I'm always a sucker for a good croissant sandwich.
I made this one with turkey, avocado, Swiss cheese, lettuce and honey mustard. The honey mustard was a bit too spicy for Jack (some days he likes it, just not today), so he ended up picking it apart a bit.
On the side, we had sugar snap peas and radishes with Ranch dipping sauce. Again, the radishes were a bit too spicy for him, so he pretty much left those untouched. But he polished off the sugar snap peas. I honestly think one reason that he likes sugar snap peas so much is because they have the word "sugar" in the name. I'm pretty sure if I just called them "snap peas," he wouldn't find them nearly as appealing.
We also had sliced honey crisp apples from Michigan (tossed with a splash of lemon juice to keep them from browning). And fat-free milk to drink.
Since this lunch is one of my favorites, I made an extra lunch box for me to eat at home. I shared some of my apples with Caitlin (peeled and diced, of course). She choked on them to the point that I had her in the heimlich position. Ugh. That is one of the reasons why I'm not a fan of feeding toddlers!
