I've gone completely down the rabbit hole of kitchen journals. Send help.
I'm still working on my kitchen journal. Part of that is getting a good, transportable meal planner so I can have my menu and shopping list together in the store. I purchased this planner on Etsy. I wanted something very simple and easy to take with me. I loved decorating it with stickers! So far so good on the kitchen journal!
Who doesnt need a little help with meal planning? This Midori style travelers insert will make meal planning a cinch. * 24 lb paper, except
absolute banger of a meal i improvised while on holiday:
sweet potato (as much as you like, i did one medium size for 2 people), peeled and cut into small pieces
spinach (as much as you think you should eat. I just weigh all the vegetables and try to get somewhere in the 200-250g per person range)
onion (i'd do 1 or 2 per 2 people, depending on the size of the onion), peeled + chopped
feta (crumbled)
pasta (~75g per person)
garlic cloves, peeled (i use one garlic clove per 2 people)
honey (optional)
thyme (i use boring dried stuff but you could get fancy and use fresh thyme i guess)
olive oil
heat the oven to 180C, take a baking tray and line it w/ baking parchment or just grease it with oil. Toss the sweet potato w/ oil, thyme and garlic and spread out over the tray. Bake for ~20 mins, then check if it's done.
Prepare pasta according to package instructions.
Saute the onion in a skillet with some olive oil. Once the onion is softened, add spinach and let it wilt.
Assemble your meal: plate sweet potato, pasta and spinach. Sprinkle feta over. Pour some honey over the sweet potato, if you using.
I had to schlep halfway across town to get almonds for this recipe and then I forgot to add them 🙃
But it works fine without them!! Works great actually
I love these baked oats so much... they have this really mild taste that i imagine could be easily spruced up a bit with various toppings but i just eat them as is

My mum and I made this salmon/leek/potato dish tonight and it was pretty good. A little too creamy, so next time I might add some lemon juice or more water, but very enjoyable.
i made these roasted pecans recently and it was a huge hit - i loved them, my parents and brother loved them, my cat loved them (tragically the poor creature was prevented from eating them, but still!)
