My unsanctioned but patently delicious white person pozole techniques: soak the chiles with a dried avocado leaf (preferably toasted with the chiles before soaking), sear off your protein in the stock pot and deglaze the pot with a light lager beer aka borracho broth, and fry off your chile paste with a few oz of good butcher counter chorizo. Also soak your own hominy if you’ve got the time (and you really shouldn’t be making pozole if you’re gonna rush things)
