With a Kitchen Aid Mixer, it's easy to make mashed potatoes that are light and fluffy.
Ingredients: 5 large potatoes, peeled and diced. 1/2 cup butter, softened. 1/2 cup sour cream. 1/4 cup milk. Salt and pepper to taste.
Instructions: In salted water, boil the diced potatoes for about 15 to 20 minutes, or until they are soft. Put the potatoes back in the pot after draining them. Set the Kitchen Aid Mixer to low speed and beat the potatoes to break them up. The butter should be soft now. Add the sour cream and milk to the potatoes. For another two to three minutes, or until the potatoes are smooth and creamy, keep mixing on low speed. Add salt and pepper to taste, then mix everything together well.
