These chilled sweet and sour cucumber noodles are a refreshing and flavorful dish perfect for hot summer days. The combination of tangy rice vinegar, sweet maple syrup, and savory soy sauce creates a delicious dressing that coats the crunchy cucumber noodles beautifully. Garnished with fresh cilantro, green onions, and sesame seeds, this dish is bursting with vibrant flavors and textures.
Ingredients: 2 large cucumbers, spiralized. 1/4 cup rice vinegar. 2 tablespoons maple syrup. 1 tablespoon soy sauce. 1 teaspoon sesame oil. 1 teaspoon grated ginger. 1 clove garlic, minced. 1/4 cup chopped fresh cilantro. 2 tablespoons chopped green onions. 1 tablespoon sesame seeds.
Instructions: To make the dressing, mix the orange juice, maple syrup, soy sauce, sesame oil, ginger, and garlic in a small bowl with a whisk. Put the cucumbers that have been spiralized in a big bowl. The dressing should be poured over the cucumbers and mixed well. Put the bowl in the fridge for at least 30 minutes with the lid on to let the flavors mix.
