If you take the trash out for your family, you probably know exactly how much waste, in bags or in trash can loads, you produce. Now think about how much of that comes from your kitchen. Do you think you could bring that down to zero? How about for hundreds of people in addition to your family? Chef Roy Choi, featured in this article from The New Yorker, has made it his goal to have a zero-waste restaurant kitchen.
