Knish vendor, 1953. Knishes are fist-sized dumplings, wrapped in dough and baked, with fillings such as potato (the most common), kasha (buckwheat), or cabbage. Carts such as this were a fixture on New York sidewalks until the Giuliani administration cracked down on them in the 1990s.

If you wrap knish dough around babybel cheeses and bake about 10 minutes 400F convection, it comes out really crispy outside and creamy inside.
Dough:
3 cups flour
2 TBS Sugar
1 tsp salt
1/2 cup oil
1 cup hot water
Knead until glossy and smooth, cover and let rest 2 hours.
Stretch translucent thin and wrap around a filling. If wrapping multiple layers, brush w oil between layers.

Potato Baby
I had just had a baby and when it was brought to me it was wrapped in foil but that seemed ok so I just unwrapped it and it was a knish.

Made some absolutely killer potato knishes, best I've done yet and I've made many knishes, the trick is ya gotta put more salt in the dough than the cowards tell u and also throw a little black pepper, onion powder, and garlic powder in the dough, too. RIP MF DOOM.
