I’ll be honest: My Ramoses have been a bit hit and miss. 🤷♂️ More often than not, my enthusiastic shaking 💪 turns my drink into a weird floating goop of whipped cream sitting on top of the cocktail, 😖but today with the help of a @punch_drink article I’ve worked out a technique that works for me, and I’m sharing it with you. Blue Ramos 2 oz butterfly pea infused gin @ink_gin 1/2 oz lemon juice 1/2 oz lime juice 1 oz cream 3/4 oz blue curaçao 3 dashes orange flower water 2 drops vanilla essence 1 egg white Soda water Chill a Collins glass with ice. 🧊 Combine everything except cream 🍶and soda 💧 to a shaker, add the spring from a Hawthorne shaker and shake like your life depends on it for as long as you can. 💪 I shook for about three minutes. #soft Open the tins, remove the spring and add 2-3 ice cubes, then shake until the ice cubes have completely melted to chill the drink (listen carefully and when the tins stop rattling you’re good to go). Then open the tins again, add the cream, and shake briefly for only a few seconds. Open pour your drink into your glass and let it sit for a minute. ⏰ Then gently pour cold soda on top to let the head rise over the lip of the glass. Do a victory dance.🕺Finally! A delicious Ramos with the cool foam! 🤩Yessss! So where did I go wrong before? I added the cream 🍶 at the start and all of my shaking turned it into whipped cream, which did NOT emulsify with the drink and completely ruined the texture.
