*Safed channe* Recipe: Ingredients - 1.5 cup safed channe (chickpeas), 2 black teabags, pinch of asafeotida (hing), refined oil/Desi ghee, 1 medium sized onion, 4 cloves of garlic, 1" ginger, 1 green chilli, 2 medium sized tomatoes, 1/2 tbsp coriander powder, 1/4 tsp red chilli powder, 1/4 tbsp turmeric powder (optional), 1/2 tbsp channa Masala (optional), salt to taste, 1 tbsp cumin seeds, coriander leaves for garnishing. Method - 1. Take 1.5 cups of safed channe and wash it well. Soak these in 6 cups of water overnight. Also put 2 teabags (for dark color). 2. In a cooker, put the chickpeas along with the water in which if was soaked. Throwaway the tea bags. Add a pinch of hing to it. Cover the lid and cook it for 7 whistles on slow flame. 3. Meanwhile in a mixer grinder, take garlic, ginger, green chilli and onion and grind it all well into a smooth paste. 4. In a pan, take some oil and heat it well. Add cumin seeds to the heated oil. Then add the grounded onion mix to it. Cook it till the mix becomes little translucent. 5. Also grind the tomatoes and then add it to the pan with onion mix. Let it cook for 2-3 mins. 6. Then add dry spices like coriander powder, red chilli powder, channa Masala, and salt. Mix it all well. Let the mixture cook till you see the oil getting separated. 7. Let the steam from the cooker be out by itself. Add the tadka from the pan to the cooker with channe. Mix it well. Cook it for 5 mins on slow flame. Adjust the consistency of gravy according to your own choice.
