Vegetarian Kyselica for Ash Wednesday
For Ash Wednesday dinner I made a dish based on Kyselica, a Czech soup composed of potatoes, sauerkraut and smoked meats. As I was following Lenten fasting guidelines, I left out the smoked meat and added red beans from a smoky Cajun spiced mix to keep the basic flavor.
As I have a heart condition I don’t follow the rigorous Lent of my ancestors, though I keep Lent in their honor. I followed the modern guidelines yesterday and only had a very small lunch and a larger dinner, abstaining from meats.
