Aubergines with wine (albergínies amb vi) 🍆🍷🍅 It's a traditional recipe from Ribera del Xúquer area of the Valencian Country.
The dish is made of aubergines with a sauce made with onion, garlic, tomato, wine, and salt, baked and cooked with olive oil and bay leaf. It's eaten in summer and early fall (aubergine season), and can be eaten warm right after cooking or cold. It's delicious with some bread to dip in the sauce.
