Tyrunt might be your best bet. Since it was recently released, it’s stuff is inexpensive now, compared to Weavile’s stuff.

The pricing where I was looking was actually pretty comparable, nothing of what I'm after for either of them would be above $30 apiece at the max. Though you're right, I do have a mighty "get it before it's gone" mentality with Tyrunt's merch because I'm concerned that once the plush are sold out in stores resellers might take advantage of its popularity and drive pricing way up.

On the other hand though I get antsy every time I look at Weavile listings, because that pesky "what if I never see one of these for sale again" thought loop keeps cropping up...

That's half the problem. I'D HAVE TO PICK JUST ONE. Dx ...Oh my gosh what if the single goldfish gets lonely. I'd have to get at least three. Three's the perfect number. Like just enough so they're not alone but also enough so that if they don't like each other they can participate in fish gossip. Yes. GOT OFF TRACK THERE THOUGH. I used to have a bunch.
