Steamed Pork Shoulder in Collard Greens (an homage to Lau Lau).
Before kids and mortgages and an avalanche of adult bills, my husband and I scrimped and saved for a honeymoon in Hawaii. We did everything as low cost as possible which meant avoiding the expensive tourist trap restaurants and eating at local joints or grabbing some poke and crackers for lunch from a supermarket.
Well, we discovered Lau Lau, which is Hawaiian slow cooked pork wrapped in Ti leaves. I loved it so much, I came up with a version to enjoy at home.
Well, you can't find Ti leaves in Canada so here is my alternative:
Chop a nice fatty pork shoulder into large cubes, do not trim the fat, keep it, buy more fat like pork belly and stuff it in there if you can, haha
Season with a couple tablespoons of sea salt, Korean black pepper, soy sauce and a dash of liquid smoke
Wrap tightly with two to three leaves of Collard Greens or spinach and then wrap throroughly with corn husks, tie to secure
Pour several cups of water into a roaster, place wrapped pork on a rack above the water (I used oven-safe custard cups to prop up the rack)
cover with roaster lid, bake in oven at 240 F for 4 hrs
Enjoy melt in your mouth pork cooked in its own fatty goodness, plus, the Collard Greens are delish, eat them too. Serve with moderately sticky rice and macaroni salad
