Enjoy the luxurious mix of lavender flowers and rich chocolate in this homemade ice cream. Lavender's light floral notes go well with the bittersweet chocolate to make a delicious frozen treat.

Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 2 tablespoons dried lavender buds. 6 ounces bittersweet chocolate, chopped. 4 large egg yolks. 1/4 teaspoon salt.

Instructions: In a saucepan, combine heavy cream, milk, sugar, and dried lavender buds. Heat the mixture over medium heat until it starts to simmer. Remove from heat, cover, and let steep for 30 minutes. Strain the mixture to remove the lavender buds. Return the mixture to the saucepan and reheat until it's warm. Place the chopped chocolate in a large bowl. In a separate bowl, whisk together egg yolks and salt until well combined. Slowly pour the warm cream mixture into the egg yolks, whisking constantly. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and pour the custard over the chopped chocolate. Let it sit for a minute, then stir until the chocolate is melted and the mixture is smooth. Transfer the mixture to a container and chill in the refrigerator for at least 4 hours or until completely cold. Pour the chilled mixture into an ice cream maker and churn according to manufacturer's instructions. Once churned, transfer the ice cream to a freezer-safe container and freeze for a few hours until firm.
