Ingredients: 4 boneless, skinless chicken breasts. 1 cup soy sauce. 1/2 cup honey. 1/4 cup rice vinegar. 1/4 cup water. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 1 tablespoon cornstarch. 1 tablespoon water. Green onions, sliced for garnish. Sesame seeds for garnish.
Instructions: Put chicken breasts in a slow cooker. Soy sauce, honey, rice vinegar, water, garlic, and ginger should all be mixed together in a bowl. Put on chicken. When the chicken is done, cover it and cook on low for 4 to 5 hours or high for 2 to 3 hours. Take the chicken out of the slow cooker and use two forks to shred it. To make a slurry, mix cornstarch and water in a small bowl. Add to the sauce in the slow cooker and mix well. Put the chicken back in the slow cooker and stir it around to coat it with the thickened sauce. Put the lid on and cook on high for another 15 to 30 minutes, until the sauce gets thicker. Top with sliced green onions and sesame seeds and serve over rice.
