A delightful twist on the classic pineapple upside-down cake, this Crock-Pot Pineapple Parfait is a layered treat featuring moist cake, caramelized pineapple, and creamy vanilla pudding. The slow-cooking process enhances the flavors, creating a heavenly dessert that's both easy to make and irresistible.
Ingredients: 1 can pineapple slices. 1/2 cup brown sugar. 1/4 cup unsalted butter. 1 box yellow cake mix. 3 eggs. 1 cup water. 1/3 cup vegetable oil. 1 cup crushed pineapple canned, drained. 1 package vanilla instant pudding mix. 2 cups milk. 1 cup whipped cream. Maraschino cherries for garnish.
Instructions: Melt the butter in a skillet, then add the brown sugar and stir until everything is well mixed. Cover the pineapple slices with the butter and sugar mixture and put them in the pan. Put the pineapple mix at the bottom of the crock pot. Follow the directions on the box to make the yellow cake mix in a bowl. Then, add the crushed pineapple and mix it in. Put the cake batter on top of the pineapple in the crock pot. Mix the vanilla pudding mix and milk together in a different bowl using a whisk until the mixture is smooth. Let it sit for a while so it can get thicker. In the crock pot, put the cake batter on top of the pudding. Turn the heat down to low, cover, and cook for three to four hours, or until the cake is done. After it's done, let the parfait cool down a bit before you serve it.
