I tried making chicken feet soup.
Ingredients list:
Chicken feet 7-8. Think of it as 1 foot per portion.
Carrots 2. Think of 1 handful for every 2 portions.
Ginger 2 inches
Red dates 7-8. Think of at least 1 date per portion.
Goji berries/wolfberries. Like, a bunch.
Chicken stock cubes 1-2. Think of 1 cube for 4-5 portions.
My method:
Fill a stock pot with water till halfway full.
Add 1 to 2 cubes of chicken stock and bring to boil.
Add ginger slices, chicken feet, chopped carrots, red dates, and goji berries.
Once reached a roiling boil, reduce the fire and leave to simmer for 45 to 60 minutes.
Guten Appetit.
Will probably add white pepper next time and see if that works with the flavour. Definitely doesn't need any additional salt, there's already plenty with the chicken cubes. Perhaps some black eyed peas and raw peanuts and moooooore ginger. I saw someone recommend Chinese yams. I'll keep my eyes open for some the next time I visit the night market.
Ideas for how to enjoy the soup
On its own. Maybe for a late night supper, but I wouldn't be satisfied with just that for a whole meal.
With noodles. Scoop out one portion into a smaller pot, dump in some Chinese dried vegetarian noodles and boil till the noodles are soft.
With rice. Either as a side, or dump a half portion of day old cooked rice into a portion of the soup and boil.
Add 2 or 3 begedil to a portion and mush it up to make the soup more hearty.
