This year, iām feeling a bit sad and single as we approach Valentines Day. Personally, iām a bit of a scrooge and would love to go to sleep on February 13th and wake up on February 15th. Maybe itās because iāve been single for forever, maybe itās because everyone around me is loved up? You wonāt find me in any heart pyjamaās that are going around right now or buying any v-tines bathing products. Iām just not a fan.
To cheer myself up from the fact my most dreaded day of the year is only a few days away, i made brownies. Now cooking i can do really well. Baking⦠well itās not my strong point. I found this recipe on Zoellaās blog about a year ago and iāve never went wrong with it!
To make this recipe you will need (in the order youāll need them):
150g of butter
250g of sugar
1 teaspoon of vanilla extract
100g of cocoa powder
2 eggs
1 bar of milk chocolate
1/2 teaspoon of baking powder
pinch of salt
65g of plain flour
1 bar of white chocolate
You want to get the boring bits out of the way first. Line a baking tray and pre-heat your oven to 180c. I also measured out all my ingredients just for ease.
The first stage is to melt the butter; 30 seconds at a time until itās melted. Iād recommend a big mixing bowl for melting the butter because the whole process of this recipe is adding things to the melted butter. Make sure your bowl is big enough for your whole brownie mixture.
Next add the sugar to the melted butter. Once itās all stirred in, add the vanilla extract and the cocoa powder.
Then add the eggs, one at a time. The mixture should be really gooey by now.
Now you can melt the chocolate, either in the microwave or via steam on the hob. I take the microwave option but itās easy to burn. My advice, check it every twenty seconds and every five seconds when itās almost ready. It should take about a minute depending on how much chocolate!
Add the melted chocolate to the mixture and mix it all in. Next add all your dry ingredients and stir it all in.
The last stage is to add in your white chocolate in chunks. You can anything here, a spoonful of Nutella, extra chocolate, even marshmallows? Or you can leave it as it is, itās entirely depending on what you fancy!
Spoon it into the baking tin and pop it in the oven. It takes 15-20 minutes depending on your oven. When the top is shiny, itās done. It should still be gooey when you take it out of the oven so leave it on the side for about an hour to cool then transfer it to the fridge for an hour to harden.
After that, cut it into squares or eat it from the tin- iām not judging!
These are the most gooey, delicious brownies ever and may almost distract me from the fact itās my most hated day of the year on Tuesday. Iāll be spending my day off social media, thereās only so many boomerangās of morphe palette openings and pandora insta shots with the caption āthe boy did good *hearteyes*ā i can take⦠ugh.
