This Healthy Chinese Chicken Stir-Fry is a quick and delicious way to enjoy a taste of China without the guilt. Packed with colorful veggies and lean chicken breast, it's a nutritious meal that's ready in no time.
Ingredients: 1 lb boneless, skinless chicken breasts, sliced into strips. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 cup snap peas, trimmed. 2 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 2 tablespoons low-sodium soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1 teaspoon cornstarch. 1/4 cup chicken broth. Cooking spray. Salt and pepper to taste. Sesame seeds for garnish optional.
Instructions: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and chicken broth. Set aside. Heat a large skillet or wok over medium-high heat and coat it with cooking spray. Add chicken strips and stir-fry for 5-6 minutes or until cooked through. Remove from the skillet and set aside. In the same skillet, add a bit more cooking spray if needed. Stir-fry the garlic and ginger for about 30 seconds until fragrant. Add broccoli, bell peppers, and snap peas to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Return the cooked chicken to the skillet and pour the sauce mixture over the ingredients. Stir-fry for an additional 2-3 minutes, allowing the sauce to thicken and coat the ingredients. Season with salt and pepper to taste. Serve hot, garnished with sesame seeds if desired.
