L'Éclair de Génie - Christophe Adam 1210 Robson Street, Vancouver. I visited one of his locations last month at 14 Rue Pavée, Paris, France. Following 15 years as Head Pastry Chef, Executive Chef and then Creative Director, Christophe Adam left Fauchon, to start the L'Éclair de Génie concept, first in Paris in 2012, & now with 25 locations spread throughout the world, including Japan, Hong Kong and Italy. While I was working in the U.K. & Europe since spring, they opened their first North American location on Robson Street in my hometown of Vancouver, British Columbia. I am very excited that I am able to get a Taste of Paris, here in Vancouver. I enjoyed the N°120 – Cheesecake Mangue (top éclair upper right photo) Mango confit and speculos crumble Cheesecake ganache and fresh mango $6.25 CDN.
