This Irish Potato and Leek Soup is a classic dish that's perfect for celebrating St. Patrick's Day. It's creamy, hearty, and bursting with flavor.
Ingredients: 4 potatoes, peeled and diced. 2 leeks, sliced. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable or chicken broth. 1 cup heavy cream. Salt and pepper to taste. 2 tablespoons butter. Chopped chives for garnish.
Instructions: Melt the butter in a big pot over medium-low heat. Put in the garlic, onions, and leeks. Cook until it gets soft. Put in the broth and potatoes. Bring to a boil, then lower the heat and let it cook slowly until the potatoes are soft. Pour the soup into a blender and blend it until it is smooth.
