Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 2/3 cup milk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. Oil for frying. For the glaze:. 2 cups powdered sugar. 1/4 cup milk. 1 tsp vanilla extract.
Instructions: In a bowl, combine the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. Heat the oil in a deep fryer or large pot to 350F 175C. Drop spoonfuls of dough into the hot oil and fry until golden brown, about 2-3 minutes per side. Remove the donuts and place them on a paper towel-lined plate to drain excess oil. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip each donut into the glaze, allowing excess to drip off, and place them on a wire rack to set.
